hat is DE and how to choose the right maltodextrin?
The Dextrose Equivalent (DE) indicates what percentage of the carbohydrate content consists of simple monosaccharides. The lower the DE, the lower the sweetness and the slower the absorption; the higher the DE, the sweeter and faster the absorption. Choosing the right maltodextrin depends on the intended purpose. Higher DE → faster energy supply, sweeter taste. Lower DE → slower but longer-lasting energy release, less sweet taste.
